I made the best chicken curry in the entire world last night. Ask my flatmate if you don't believe me. All you need to do is follow this recipe:
West Indian Curried Chicken Roti
It is easy, but it's also time consuming and quite hard work - particularly the rolling of the roti bread - but totally worth it. I've tried making curries many times and always been disappointed with the results, as they've come out rather thin in flavour, but this one turned out better than any I've had at a restaurant. The key, I'm guessing, is lots of spices and making your own curry powder from scratch, and then, of course, cooking the chicken on the bone, because chicken fat is super flavoursome.
I don't know why but I've been thinking about Mark Lamarr recently. On Saturday night I sat in bed and watched old clips from Never Mind The Buzzcocks and I was reminded how very attractive I used to find him (and still do). He was so sharp and angry and funny (and lovely looking), and I just can't understand why he isn't on television anymore. He doesn't even have a radio show now, having left the Beeb in December last year, so there's no way for me to get a fresh fix. I wonder how he earns money these days? I wonder if he's single.
I'm having a dinner party on Friday and I'm stressed about it. I'd cook the curry previously mentioned if the food didn't have to be pesce/vegetarian, and I haven't come up with an alternative I'm happy with. Drat! It also has to be nut free (Sharan is fatally allergic), mushroom free (I hate them), light on onions and garlic (Hilary is sensitive), and it can't be too pricey, or too complicated (although it can be time consuming, as I have the day off work to prep). Suggestions welcome!
